**Festival Feature!**

Montgomery's Cheddar has a deep, beefy, umami flavor, with grassy, nutty and fruity notes. It has the creamy mouthfeel you expect from a cheddar, yet its crumbly texture lets you know these wheels are carefully aged. The cloth binding is a traditional step in the cheddaring process that allows the cheese to breath as it ages, letting complex flavors develop. The cheese ages for about one year on the farm before being sent to Neal's Yard, distributors of select British cheeses, for continued maturation and care. Montgomery Cheddar's bold and gracefully balanced flavor profile has earned it much deserved acclaim across continents.

The Montgomerys are 3rd generation farmhouse cheddar-makers who produce this beautiful clothbound cheddar. James Montgomery & Steve Bridges use milk from their herd of 140 Friesian cows, and the family uses the same strain of cultures today that they did when they started 70 years ago. Fun fact: The Montgomerys' calves graze near the farm grounds' Iron Age fort which dates back to King Arthur defending Wessex from the Saxons!
