This cheese comes from a 5th generation family of affineurs. Luigi Guffanti purchased an abandoned silver mine in 1876 in Valganna Italy. The temperature and humidity is constant year round and makes for a perfect atmosphere for cheese to ripen and mature.
Gorgonzola dates back to the 14th century and comes to us from the Lombardy region of Italy. According to legend, the cheese was invented by a lovesick cheese maker who in a rush to meet his lover forgot the curd in the vat over night. In order to not waste it he mixed it in with the morning curds. Because the acid level was different in the two curds, it created folds and spaces between the curds that encouraged the development of mold in the cheese.
