Bacon Bourbon Caramel Corn

Ginna Haravon was getting her list of menu items together for an annual superbowl party when she noticed things were a little heavy on the savory side. She addressed the issue with her first batch of bacon caramel corn, throwing in a little leftover bourbon into the caramel just for kicks. The corn was such an instant hit that she went on to build her confection company, Salted Caramel, around this product. The perfect balance of sweet, salty and smoky makes this quite the treat.

Truffle Duo

Katherine’s passion for confection making began at age 10 on her family’s Wisconsin dairy farm. She found the cream from their herd of Jersey cow’s was perfect for caramels, which she began selling at her father’s office for a quarter. Flashing forward, Katherine makes a wide variety of confections, including these delicious, seasonal truffles. Silky ganache and well balanced flavors make these local treats delectable.

At the tender age of six this future graduate of the Chicago French Pastry School left the house with her pink suitcase, declaring her intention to live in a candy shop. That dream has come true as she crafts nostalgia-inspiring American confections with a whimsical slant. This nougat is a Pastoral exclusive, softer than its European cousins with a brilliant balance of texture created by the addition of almonds and pistachios.
