This cow and goat milk cheese streaked with blue is cave-aged for a creamy consistency with a slight tang and sweetness to the finish. Patterned after a Dry Jack, the experimental cheese boasts extraordinarily rich earthy and mild bluesy notes. Great for cheese boards, appetizers or crumbled over a savory dishes.
