Tomme de Nena is made in the style of a classic French Tomme with curds typically used to make brie: double cream curds instead of skim-milk ones. This cheese is washed in a red ale, creating a firm, but pliable, texture. It is sweet and milky, with lingering washed rind earthiness redolent of the classic, Italian Taleggio.

Inside the small Kentucky farmhouse where Kentucky Rose is made, one will find a hard-working and scientifically-minded artisan at work behind a single, stainless-steel vat. With 120 dairy cattle, Kenny Mattingly and his family were able to produce over 70,000 lbs of cheese last year in over 27 different varieties! During a trip to Europe in the early 90’s he was inspired by the way western European dairy farmers were adding value to their product by making it into cheese, and upon returning to the states he decided to convert his dairy farm into a cheesemaking one.
