Traditional Pleasant Ridge Reserve is patterned after Alp mountain cheeses. Made only from the spring and summer milk of their own herd, the sweet flavors of the pasture grasses, herbs and wildflowers are detectable in each bite. Uplands Cheese Company selects 12 batches from their 2012 production of Reserve, aged them for at least 15 months, and released them this fall and winter. This limited selection is a small fraction of the cheese made last season, and showcases the lingering sweetness of Pleasant Ridge cheese in its most distilled form.
