Located in one of the country’s epicenters for natural, artisan food, Point Reyes Farmstead Cheese Company utilizes their certified organic, San Francisco Bay area land as a pasture on which their cows graze. The raw milk is gathered each morning and turned into their original blue cheese within hours. The aging process, however, takes six months, with the initial three weeks dedicated to hand-salting, turning, and piercing the wheels.
