Vermont’s venerable farm family cooperative, Cabot Creamery, teamed up with the Cellars of Jasper Hill Farm to create this multi-award-winning cheddar. In the English tradition, the cheese is wrapped in cloth bandages and allowed to breathe as it ages for 12 months at Jasper Hill’s cutting edge underground aging facility. The result is a sharp, nutty, complex and impressive American cheddar, which won American Cheese Society’s “2006 Best of Show.”
