Hailing from northwest Italy in the Cuneo region of Piedmont comes this mixed milk beauty which is speckled throughout with small pieces of black truffles. Caseificio La Bottera is a third generation family owned farmstead operation. The cheese is rich wit a creamy crumbly texture. The goat's milk adds a tang that when combined with the buttery cow's milk gives us a sour buttermilk flavor. A yeasty, batter like richness accents the subtle, balanced taste of black truffle. The cheese is aged in traditional rooms whose temperature is controlled by the natural stone walls and the aging varies from season to season. The cheese is ready when the black truffle aroma is delicately infused throughout the whole cheese.
