Rumored to have been Charles de Gaulle’s favorite cheese, at first glance Mimolette looks more like a cantaloupe than a dairy delicacy. Sealed within the bright orange color, however, are subtle and caramel flavors that make this cheese a crowd favorite. Inspired by the Dutch Edam cheese and aged for twelve months, Mimolette has a hard, inedible rind and smooth texture. Best served with light white wines or soft reds, Mimolette can be cubed and served as and appetizer or grated on a salad.
